10 of 10 people found the following review helpful. not what I expected, but still a good cookbook By T. Donovan When I ordered this, I expected more traditional Egyptian recipes, perhaps streamlined for a more modern kitchen. I did not realize that the author owns a set of cafes where I ate sometimes in Cairo, and also opened a restaurant that I read about online but never had a chance to visit. So it seems that many of these recipes are dishes that she developed herself.Nevertheless, I have tried some of the recipes from this book and have enjoyed them enormously. There is a Cauliflower Salad that is heavenly and the soups are out of this world, especially the Koshari Soup. I like the little regional touches here and there, like Alexandria-Style Koshari. Her version of Alexandria-style Liver is the best from the many cookbooks I have tried.I really enjoy this cookbook because except for a few items like fava beans, it is possible to cook these recipes without a trip to a Middle Eastern grocer and without an investment in high-dollar ingredients. I have always liked Egyptian cuisine because of its creativity and ability to do such great things with humble ingredients. The author is definitely following in these footsteps and I admire her creativity. I wish that I had had this book when I was living in Egypt. I will be using this book a lot.
5 of 5 people found the following review helpful. Cook the Real Deal Egyptian By nomadsheart Great book on truly Egyptian food made with pantry items you can find here. Recipes are direct and straight forward and I have been pleased with results. I share the book with an Egyptian friend who remarked that the recipes were quite authentic and even noted the regionality of some recipes (this is how koshery is made in Cairo or Alexandria for example). It should be noted that Egyotian cuisine is neither a Lebanese derivative nor North African, like Moroccan. I am glad to see someone publish a quite nice book o the topic.
