By Reviews on Amazon In recent years there has been a growing interest in fermented foods and in particular the health benefits, particularly with the gut which is a key part of our immune system.I found myself laughing at the start of this book, as I was quickly able to identify with the author who grew up in the UK - she lived in a farm, I lived within walking distance of one - and part of her summer involved pickling, canning and preserving the foods they collected. Similarly I remember watching my mum make jams from the berries we had picked and of course lots of pickling! The British love their pickled items - every local pub has a big jar of picked eggs on the counter; we pickled onions, beetroot (known more commonly as beets here in the US ), eggs, gherkins and red cabbage! Little did I know this would be a big trend years later and is so good for you!The book has a informational beginning, looking at what fermentation is and the health benefits of fermented foods including: Improved nutrient absorption, weight loss, mood enhancer ,natural detoxification, as well as benefits such as cost savings; the ability to enjoy seasonal produce all year and all natural ingredients. Each section is described fully but succinctly. This is followed by a look at types of fermented foods, ingredients, equipment, and a look at some dangers of fermenting .Then the book really gets into how to ferment beginning with Kombucha for beginners which was why I chose this book in the first place. It is really detailed and easy to follow, looking at what a Scoby , how to grow your own, making continuous brew of Kombucha then making and flavoring kombucha tea with some great recipe ideas. For me, having this all step by step in one book was great and I really appreciate the book for that alone.The book then goes into making Sauerkraut, again with suggested recipes, that are detailed yet simple to follow (there is even a Sauerkraut cake!); Kimchi which I was very excited to see as our local Trader Joes has not had it on the shelf for close to a year, and this is fairly attainable as long as I can find a Chinese radish. A guide to making Tempeh - note that this does state it is both tricky to make and find the primary ingredient of Rhizopus Oryzae -with this I plan cheating and buying the Tempeh but using the great recipes including balsamic glazed Tempeh and kebabs!Then a more traditional look that mostly takes me back to Britain - picked eggs, beets, shallots, and jalapenos; before delving into jams detailing right down to making your own pectin and making Sourdough starters for bread to go with that jam!The author ends with a great section of troubleshooting tips, that should help out those of us who are mostly novice to this topic! She clearly knows and loves the area of fermenting, and this is a well written, detailed and step by step guide to the fermentation process that is both interesting and easy to follow! At some point I will add to this review with my adventures in Kombucha making using this book as my guide!
