Let’s go for a ride from Montego Bay to Memphis and all stops in between! When I ran my restaurant I had secret spice blends, which I am not sharing in this book, they are mine! But the ones I have included are excellent and you will enjoy them. I have included my 20x10x10 method in this book. 20 recipes, 10 ingredients and 10 minutes or less to put together. That is more recipes than you will ever need and you may find yourself blending your own. There is a 17-spice recipe that I could not help include but the rest are under 10 spices. You do not need all the spices at once. Start off with the simple recipes and build up your pantry. You will find that most recipes have different blends of the same spices. Once you have the spices you need you can throw all of these recipes together in minutes. I have included a list of the spices for the recipes included in this book. A word on sugar. To make it Paleo you can use coconut sugar. You can also baste the meat with maple syrup or put the syrup in the spices and use it as a wet rub. Remember to get my Paleo guide Do’s, Don’ts and Why’s of Paleo. It contains valuable information on how Paleo works and the eat and don’t eat lists. You have so much variety the choices are endless. It opens your eyes to the numerous ingredients that are out there that can becombined and blended to make the perfect Rub to suit you taste buds, whether that be sweet hot or otherwise.An eye opener and a blessing for those who are bored cooking within the limits that they know.One for for the collection !!!

I am just getting starting with barbecuing for the season and I am a big fan of spice mixes or rubs. This is not a big book because it doesn't need to be. The book starts with a short introduction that sets the stage for preparing spice mixes.There is a very brief section on containers, any air tight container will do, and a section on preparation which could not be more simple to follow. Next up is a long and varied list of ingredients that you can use to make your own combination of spices for your particular tastes.To bring everything together there are the twenty recipes for making spice mixes. There is everything from a 17 Spice Rub (by far the most spices) to Classic Pork Dry Rub to Seafood Boil. All the recipes, with the exception of the 17 Spice Rub, have less than10 ingredients and take less than 10 minutes to make. I could not ask for a better book to start the season with.I really enjoy barbecuing pork loin among other things. I plan to give it a try this weekend when I have friends over. If you barbecue and are anything like me I am always looking for new rubs and the possibilities are endless with these recipes and the list of possible spices you can use. There are also some spicy combinations for those that like to heat things up a little (or a lot).
